Ichigo Ichie
Paper lanterns, a painting on the wall, the scent of warm rice. Mikôto has a signature of its own, on the plate as in the room and in the music of the evening.
Our philosophy
Every minute counts – precisely because it never comes back.
一期一会, Ichigo Ichie, means: this encounter will never come again. That is why every minute with us should have meaning.
The circle above our name is an Ensō (円相): a Zen circle painted in a single brushstroke. What is painted once remains, and no two circles are alike – any more than two evenings are.
In the house
Sight
Paper lanterns and golden light in Stuttgart, neon and a wall of waves in Ludwigsburg, and pictures on the walls.
Sound
The sizzle in the pan, the clinking of glasses and, on special evenings, music and DJs.
Smell
Smoke from the flame, warm rice, a glass of Sake. The evening begins before the first plate arrives.
Taste
Clear flavours, raw fish, a sauce that overpowers nothing.
Touch
A full table, wood beneath your hands, a warm bowl – and hosts who take time for you.
Our goal
Each location has a world of its own, Japanese in style, with its own bar and evening culture.
What it comes down to
“Technology and art help us along the way. What matters is the meeting of one person with another.”
“In the kitchen, when a technique is passed on, and in the dining room, when you are welcomed. And at the table, between you and the people you are dining with.”
